10 gluten free, raw, vegan, sugar free, low fat
1 cup (170 g) raisins - room temperature
3 / 4 cup (75 gr.) Almond flour
1 / 2 cup + 1 tablespoon (50 g) coconut (grated)
2 tablespoons (15 g.) Unsweetened cocoa powder
1 tablespoon maple syrup
Water to form a mixture (about 1 teaspoon)
1 / 4 cup (25 g.) Finely grated coconut for oval.
Add the raisins to the mixer and mix them until they are small. Then add almond flour, 1 / 2 cup of coconut, cocoa powder and mix until crumbly.
Add maple syrup and blend until all ingredients are well blended.
The water (1 teaspoon) is then gradually added until the mixture forms a dough. Using a tablespoon, shape small balls and arrange them in a plate. Once the balls are done, roll them into the finely ground coconut.
Coconut truffles are most delicious at room temperature, but if you want to keep them for a longer time, they can be stored in a refrigerator or freezer.
