The inspiration for this delicious winter salad was the traditional chicken salad with nuts and green apple for Western nations. Following the 3 basic principles: seasonality of the main ingredients (root crops), taste and nutrition, this recipe is in keeping with the vegetarian and vegan lifestyle.
1 medium sized carrot
1 small red beet
1-2 celery stalk
1 green apple
1 small onion finely chopped
1 / 2-1 Gully (optional)
2-3 tbsp. sunflower
For the sauce:
Option 1
2 tbsp. cold pressed olive oil
1-1.5 tablespoons lemon juice or apple cider vinegar
sea salt and black pepper to taste
Option 2
2 tbsp. mayonnaise
1 tbsp. lemon juice
1 tbsp. water
Sea salt and pepper to taste
Instructions:
To get a salad with a rich and varied texture, I recommend grinding the carrots in bulk and the beets finely chopped. The celery is finely chopped, the apples are cubed according to 1 - 1.5 cm, and the goulia is cut into thin flakes with a vegetable peeler or grater. Mix all the sliced ingredients, sprinkle with sunflower and cover with the dressing of your choice. Stir before serving.
